Study Published on Food of Dagestan Mountain Jews

Modern ethnographical on foods of different ethnicities shows that food is one of the most stable cultural elements. The special value placed on food makes it an interesting subject for observation and research, and the number of studies on food has considerably increased in recent years. Dagestanian national foods have been researched as well.
Z. Ramazanov published a book In Makhachkala, "The Food of Dagestan Mountain Jews (XIX - early XX centuries)." This historic and ethnographic study is dedicated to traditional food - one of the most important components of the traditional culture of Mountain Jews of Dagestan. The book is based on extensive field research, as well as archival and literary material. The monograph is written for ethnographers, historians and readers interested in the history and culture of the peoples of Dagestan.
The study was published with aid from the International Research Centre of Russian and East European Jewry.
The editor-in-chief is M.-Z. Osmanov, Ph D. in Historical Sciences.
The publication has been ratified by the Institute of History, Archaeology and Ethnography of the Daghestani scientific centre of Russian Academy of Sciences.
